ANCHOVIES

Anchovies are a family of small, shiny, silver, common salt-water fish. They are considered oily-fish.  

They are named Anchoes  from the Spanish and more in general they belong to the Bluefishfamily,  made up with Anchovies, Sardines, Alici [the  "White anchovies" in the English speaking countries] and other fish.

Anchovies are abundant in the Mediterranean and are regularly caught on the coasts Catalan salters.

Anchovies can be cooked fresh or usually, packed in salt, tinned or jarred in olive-oil. .

Anchovy pasta is a salted  sauce. Anchovy-olives  consit of olives stuffed with anchovy fillets.

For domestic use, anchovy fillets are packed in oil or salt in small tins or jars. They are used as cold dishes [under olive oil or marinated] or to prepare delicious dishes. Ideal as appetitizer [tapas, anchovy-olives, rolled anchovies], anchovies may be added to Pizza or Salad in order to enrich their.
